Cooking Bajan Style: Eddoes

Travelers may hear locals talking about eddoes or even 'pulped' eddoes as a culinary dish served in Barbados. Firstly, just to do a little explaining, an eddo is a tropical vegetable - or as said in Barbados ground provision - which is closely related to taro (dasheen). They are small and round in shape with a brown husky coating covering the vegetable's interior.  Eddoes remsemble that of a dense and starchy potato yet have a rather complex flavor. They can be rather slippery once cooked but that adds to the whole experience. Bajan's use eddoes either as a side dish to fish and meats, or in soups. One of the most popular side dishes are 'pulped' eddoes. 'Pulped' eddoes are first husked and peeled. Then, once boiled the eddoes are marinated in a pickle (lime, onion, bonnie pepper, salt, parsley and thyme).
